Grandma’s Famous Stuffed Bell Peppers

Time flies these days and it can often seem impossible to put together a delicious meal for the entire family. What’s more, good nutritional habits often take a back seat to quick and easy meals. Yikes! So how can we feed our families healthy meals with the little time we have each day? Look no further than Grandma’s Famous Stuffed Bell Peppers. Not only are stuffed peppers easy to make but they are very healthy for all the members of your family.

So let’s get started! You will need:

· 4 medium sized Green Bell Peppers
· 1/4 cup of Vegetable Oil
· 1 medium Onion, finely chopped
· 2 cloves, minced garlic
· 1/2 lb of ground beef
· 1/2 ts of salt
· 1/2 ts of pepper
· 1/2 ts of thyme
· 1/2 cup of Drained stewed tomatoes
· 1 cup of cooked rice (brown is healthier)
· 1 tb of parsley
· Optional—package of shredded cheese

Directions:
First, you will need to cut the tops off of each pepper. Scoop out the seeds and the veins to make sure the inside is clean. Place the peppers in a big pot full of boiling water for about 3-4 minutes. Occasionally stir the peppers. Take them out and let them cool.

Next, you need to get a big skillet to cook the meat in. Cover the bottom of the skillet with Vegetable oil. Brown the meat in a skillet with the salt, pepper, onion, thyme, garlic. Combine the meat mixture in a bowl with the tomatoes and the parsley.

Heat the oven to 325 F. Cover the bottom of a glass pan with water so the peppers don’t burn. Place the peppers in the pan and stuff them with the mixture from the bowl. Place the pan in the oven for 20-25 minutes. Once you take them out, you can add cheese on top of each pepper if you wish.

Congratulations! Now you have completed this easy and healthy meal for your family to enjoy.
