Refreshingly Cool Tomato Salad


There is just something about a tomato salad that tops off any summer meal.  With fresh produce from the garden or the farmer’s market it really adds pizzaz.  I enjoy a variety of fresh tomato salads a week.  The local hot springs pool actually sells tomatoes that they grow hydroponically and man are they amazing!  Also my husband works with the Amish often and they bring a couple by as well.

The herbs in this tomato salad really make the combination of tomatoes and onion pop!  Give it a try before the juicy red tomatoes disappear for a whole year.

Ingredients
  1. 4-5 tomatoes
  2. 1 small red onion
  3. A couple of sprigs each parsley and dill, leaves only, roughly chopped
  4. 5 basil leaves, roughly chopped
  5. Extra virgin olive oil
  6. Balsamic vinegar
  7. Sea salt
  8. Freshly cracked black pepper
Instructions
  1. Dice tomatoes. These don't have to be exactly the same size.
  2. Thinly slice the onion. Then cut those slices in half so you get a smaller bite of onion with each bite.
  3. Toss onions, tomatoes, and chopped herbs together and dress with a couple of good drizzles of olive oil and balsamic vinegar.
  4. Sprinkle with sea salt and fresh cracked black pepper.
Notes
  1. ***I always do this to taste but if you want a guide just use 3 parts oil to 1 part vinegar, toss, taste, and adjust. Toss carefully...you don’t want battered tomatoes!

    Yum, yum, yum. What a great combo — tomatoes and basil. Can't go wrong! I like the other herb combos, too. Heirloom tomatoes are usually better than the bland ones you find in most big grocery stores.
