Surprise Your Valentine With Moist & Delicious Carmel Apple Upside Down Cupcakes & Smothered (With Love) Chicken

This Valentine’s Day you may be looking for something a little bit different to cook for your sweetie. But since Valentine’s falls on a Thursday it’s not like you’ll have a ton of extra time after your daily activities to put something together for dinner.

So here are some easy Valentine’s recipes you can put together on a Thursday night:

Smothered (with love) Chicken

Ingredients:

4 chicken breasts

2 ½ tsp chicken cooking base

1 ¾ cup water

2 tbsp flour

½ onion diced

vegetable oil

flour to dredge chicken

 Directions for Smothered (with love) Chicken

Preheat oven to 350.

Dredge the chicken breasts in flour, shaking off the excess.

Heat oil in a non-stick skillet and brown the chicken on both sides for about 5 minutes per side, removing from skillet once browned.

Spray the same skillet (saves on cleaning time) with non-stick spray and cook the diced onions for about 5 minutes until slightly browned.

Put the 2 tbsp flour, water and cooking base in a bowl and mix. Place in skillet and cook until thickened.

Put the chicken breasts back into the skillet (with the sauce in it) and cover with a lid. Place in oven for 30 to 45 minutes or until tender.

Serve.

Valentine’s Day wouldn’t be complete though without a fun and tasty dessert. Try these Caramel Apple Upside Down cupcakes for something a little bit different and light enough that you won’t be too weighed down after dinner.

 Ingredients for Caramel Apple Upside Down Cupcakes:

1 box yellow cake mix

1 ½ sticks unsalted butter

2 cups brown sugar 2 cans of apples (canned fried apples are the best if you can find them)

24 paper muffin liners

 Directions for Caramel Apple Upside Down Cupcakes

Preheat your oven to 350.

Prepare the yellow cake batter according to the directions. Set aside.

Line the muffin tins with the paper liners and spray lightly with a cooking spray.

Mix the butter (melted) and the brown sugar together. Put a tablespoon of the mixture in each muffin tin, spreading so that it covers the bottom of the tin.

Put 2 or 3 apple slices in each muffin tin on the sugar-butter mixture.

Pour in the yellow cake batter.

Bake for 18 to 22 minutes or until a toothpick comes out clean.

Remove from oven and cool for 10 minutes.

Turn over tin onto parchment paper lined tray or non-stick surface.

Remove the muffin paper from the cupcakes while they’re still warm to avoid losing any apples.

There’s something kind of fun (even as an adult) about eating muffins or cupcakes the “wrong way”.

    I’ve never actually had upside down cake or cupcakes, but these look really good. I don’t think the bottom of a cupcake is as good as the top, so putting the toppings there might actually help 😉
