Lighten Up Mexican Night With Cilantro Lime Rice

Mexican night is a common occurrence in our house, actually is comes more often than I want to admit because it’s fast, cheap and I know the family will have no complaints.  Feeding my picky meat and potatoes only bunch can get a little exhausting sometimes, and that is when I turn to Mexican Night.  The convenience of being able to customize each person’s plate without a lot of fuss saves a lot of “Mom I hate tomatoes”, “I don’t want no white stuff on mine mom”, “What is this?”.

Cilantro Lime Rice

Mexican Night fits the bill every night but the one thing I am not able to serve often is rice.  That’s because I married a potato farmer and it’s an unspoken rule that serving rice is the quickest and easiest way to ask for a divorce.  These farmer’s are always to the point.  Unfortunately, Cory married me and I like to break the mold and I love rice.  White rice, Brown rice, Spanish rice, Fried Rice and Cilantro Lime Rice.  Yum!

When Mexican Night comes around I like to whip up a quick rice side dish (for myself of course) and Cilantro Lime Rice is one of my favorites because it is light and refreshing.  The lemon juice makes it refreshing with a little bit of zing to it and the cilantro is amazing, but I have a massive addiction to cilantro and don’t think enough is ever enough.  Cilantro Lime Rice is delicious paired with your family’s favorite tacos or a light addition to these  Creamy Green Chili Cheese Burritos.

The Cast Of Cilantro Lime Rice

3 cups of hot cooked rice, long grain doesn’t get mushy but you can use Minute Rice
1/2 cup of chopped fresh cilantro
The juice from 2 small or 1 large limes
The zest from one lime
Salt to taste

Directions For Cilantro Lime Rice

1. Cook rice according to directions

2. Fluff your rice and add lime juice, lime zest, cilantro and salt. Stir well and serve warm.
