 Fresh corn is starting to hit the farmer’s markets and grocery stores.  While it’s awesome to eat it from the cob, smothered in fresh butter and salt, I also love it with a few of my other favorite summer veggies in Fresh Corn Salad.  It has a simple oil and vinegar dressing that makes this a breeze to assemble and on hot summer nights, a great salad to cool off with.  With just a few ingredients, you’ll be ready to chill this salad for a few hours and make a quick meal fabulous, or a picnic memorable!

Preparing Corn for This Fresh Corn Salad Recipe

Prepping the corn for Fresh Corn Salad is quite easy.  Once you shuck the corn, only boil it for about 3 minutes, until a knife inserted into a kernel only has a clear liquid on it.  That means the starch is cooked, and the corn will be tender and sweet as sugar.  As soon as the juice is clear, cool the cobs in a bowl of cold water to stop the cooking process and maintain the beautiful golden color.  The corn will be easy to cut off the cob by simply placing a sharp knife at the edge of the cob and kernels, cutting from the top of the ear to the stalk.  Continue around the cob until all of the tender kernels are cut away.  You will have perfectly pretty kernels for your Fresh Corn Salad Recipe.

 The Cast Of Fresh Corn Salad

5 ears fresh sweet corn
½ red onion, finely diced
½ C olive oil
⅓ C apple cider vinegar
6 basil leaves, sliced thin
salt
pepper

Fresh Corn Salad Ingredients

Directions For Fresh Corn Salad

1.  Boil a large pot of water.

2.  Shuck the corn and carefully clean off all the silk.

3.  Boil the corn for 3 minutes, until juices of a pierced kernel run clear.

4.  Place the corn in a bowl of cold water, until the kernels are cold.  Carefully cut the kernels from the cob, into a bowl.

5.  Place the remaining ingredients with the corn and gently stir.

6.  Chill for at least 4 hours.

Serve cold.

Fresh Corn Salad for Picnics

This Fresh Corn Salad Recipe is perfect for picnics.  The vinegar based dressing will stay tasty even in heat, and you can wrap the salad in ice packs to keep it cool, if you like.  It’s a great salad to brighten up any table, and goes well with other traditional picnic foods.  You can also use Fresh Corn Salad as a relish to complement other foods, such as meats.  It’s a great topping for steaks, pork chops, and chicken.  So use a little or use a lot of this Fresh Corn Salad Recipe for your next gathering!
