Beets are one of those vegetables that gets put in a love-hate situation all the time.  You have people that absolutely love them, and others that, well, don’t.  Their earthy, rich flavor  gives your taste buds a workout that they will greatly enjoy.  But, I’ve turned many a beet-hater into a beet-lover by making them my Orange Harvard Beets.  It doesn’t take much, and you can even use the leftovers in salads the next day.  They make a fantastic side dish, and take advantage of a vegetable that has so much flavor!  I use frozen orange-pineapple juice and a bit of vinegar to give Orange Harvard Beets their distinctive zesty flavor that even the kiddos love.

What Orange Harvard Beets Can Do for You

Beets are full of fantastic vitamins, making them one of the healthiest veggies out there.  Potassium, magnesium, fiber, phosphorus, iron; vitamins A, B & C; beta-carotene, and folic acid are all contained in these pretty little orbs.  Orange Harvard Beets are also high in energy, providing a great source of slow released natural sugars into your bloodstream, providing a longer burning energy source that other fruits and veggies. The best thing about beets is that all this goodness is available year round in your favorite produce section.

The Cast Of Orange Harvard Beets

2 bunches beets, approximately a dozen small to medium beets
1 T cornstarch
1 T sugar or honey
3 T frozen orange or orange-pineapple juice
dash salt
⅔ C water
¼ C apple cider vinegar

Directions For Orange Harvard Beets

1.  Trim the greens off the beets, leaving about an inch of stalks

2.  Boil in a saucepan of water for 30-40 minutes, until tender throughout.

3.  Drain the hot water and refill with cold water.

4.  When the beets are cool enough to handle, trim the stalks and root off the beets and slide the skin off.  Slice the beets into a bowl and set aside.

5.  To wash the beet juice off your hands, rub with ground coffee and warm water.

6.  In a medium saucepan, mix the remaining ingredients.  Heat to a low boil, stirring constantly.

7.  When the sauce thickens, add the beets and stir gently.

8.  Serve hot with your favorite meal.
