Summer is in full force or at least will be in less than a week on the 21st of June and I am in search of things that remind me of summer and are cool. A cool glass of lemonade, tart and sweet cream cheese desserts, and pasta salad. With the heat of summer comes busy schedules as well. Cory is in the field working later and often times through lunch which I am used to having him home for. Sprinklers might run themselves but the fertilizer tanks need constant watch. Don’t even get me started on the boys schedules with swimming lessons, play dates and camping with my parents we are busy as I am sure most people are!
So since summer is here and we are busy that leaves me looking for quick meals to have on the table for meals. Suddenly Salad becomes a go-to side dish for my household because it can be made quickly in the quiet of morning before anyone wakes up and popped in the fridge, just waiting for to be eaten. Served with a warm grilled cheeseburger and a cool glass of homemade lemonade our meal times are in the table quickly, so that we can eat fast and scramble.
Our favorite Suddenly Salad flavor is ranch & bacon, and I like to add frozen peas and broccoli to the mix. I add frozen peas and broccoli to the noodles while they are boiling and everything finishes up together. While a few peas are included in the mix it just isn’t enough for my taste buds. I have also been known to throw in a couple teaspoons of dried celery to the mixture as it’s boiling. The celery soaks up the water and is re-hydrated by the time the noodles are finished, just one more way to add some vegetables. Just remember to add a bit more water than called for during the boiling process if you start adding more vegetables to the mixture to compensate.

11 years agoI have never used Suddenly Salad as of yet. I love pasta and I would add black olives and also artichoke hearts to this. Any kind of veggies would be terrific too.

11 years agoI’ve used it once and I’ve added bacon, tomato, grilled chicken, avocado, and black olives. We used it as a main dish for dinner.

11 years agoI love Suddenly Salad. I mix in pepperoni, mushrooms and olives a lot of the time. I also will mix in canned chicken and frozen peas. It is a great item to have on hand especially in the Summer.

I love the convenience of having a box on hand. Sometimes I just don’t have the energy to dice up all the veggies I like in my pasta salads or the time to run to the store to get all the “flavorings”. Good luck!
