Growing up tuna fish sandwiches were a staple in our lives, a well loved staple I might add. Until I married my husband I didn’t realize that what I had actually grown up with was tuna salad sandwiches, hearing those words growing up I always I visioned sliced tuna fish in bread with lettuce and tomato. Yuck is what I have to say to that. Little did I know right?

Not only did I not know I was eating tuna salad sandwiches I didn’t know about chicken salad sandwiches either until Grandpa Don passed away and the church hosted a luncheon for the family. What a surprise did I receive when I bit into what I thought was tuna fish, a tuna fish like I had never had before. One that didn’t taste like tuna at all, packed with celery and grapes. Perhaps. It the best timing but I leaned over to my mother in law and said what the heck am I eating! A new love was awakened that day for me.

Chicken salad sandwiches are delicious! How did I not know about these growing up? Of course it meant that I had to hurry home and make up my own chicken salad recipe of this new found sandwich minus the grapes, while I love grapes they just don’t do it for me in this sandwich. In the last year or so I have been an avid purchaser of bagel and sandwich thins. The bagel thins have the taste I crave often slathered with cream cheese but lighter on the calorie content and the sandwich thins offer variety to my meals. There is just something about using a sandwich thin in place of a bun that makes it a meal changer for me. That is just the case for my chicken salad sandwich and I must say cleaner to eat than the usual croissant because of less crumbs.

Chicken Salad Recipe

Chicken Salad Sandwiches

Ingredients

  • 2 - 2 1/2 cups cooked diced chicken
  • 2 celery stalks with leaves finely diced
  • 1/4 cup purple onion
  • 1/4 cup mayonnaise
  • 1/4 cup miracle whip
  • 4 teaspoons Worcestershire
  • 1/2 teaspoon garlic powder
  • 1 cup halved red grapes (optional)
  • salt and pepper

Instructions

  1. Combine garlic powder, Worcestershire, miracle whip and mayonnaise in medium bowl and mix well.
  2. Add chicken, celery stalks, onion and grapes to the mayonnaise mixture. Coat chicken mixture well.
  3. Sprinkle chicken salad with salt and pepper to taste.
  4. Serve on your favorite sandwich thin from Oroweat.

Notes

If you prefer to use all miracle whip or all mayonnaise you can. We are a miracle whip family but I wanted the zing that mayonnaise gives the sandwich so I used both.
