I am all about the homemade option when it comes to any recipe. However, I have to say that I had struggled with a good Homemade Green Chile Sauce until my friend Candace came along and provided me with this one that I’m sharing with you. Boy, it makes all the difference in the world when you get that perfect recipe you’ve been searching for.

Green Chili Sauce Recipe

Making green chile sauce is sincerely super easy and it tastes so much better than the store-bought stuff. Don’t get me wrong, the store options aren’t terrible and you can definitely make do with them. However, learning how to make green chile sauce at home is much more satisfying and your taste buds will thank you.

How Do You Make This Green Chile Sauce Recipe?

Melt the butter in a saucepan over medium heat.

Saute your chopped onion until it’s soft. Add in the flour to your butter mixture and make a roux (Here is a great tutorial on on how to make a roux). Add the chicken broth to the butter mixture and stir until smooth.

Add the chiles, garlic, salt, and cumin and simmer for 10-15 minutes.

Serve with tortillas, smothered burritos, green chile french fries…whatever you prefer!

Tips for Making Green Chile Sauce

  • Pay attention to the green chiles you use. Depending on their access to water during their growing time, green chiles can range in spiciness. If the level of hotness isn’t listed with the green chiles when you buy them, I would advise taking a little taste test of the pepper. This will help you gauge the heat level of your sauce.
  • One of the best aspects of learning how to make green chile sauce at home is the fact that it freezes well. This means you can make it in large batches (like I do) and freeze it – only thawing it as you need it.
  • The longer the chiles simmer, the spicier they can get. So, if you got really spicy chiles, you may limit the time you simmer them.

What is the Best Canned Enchilada Sauce?

I would say making your own green chile sauce recipe at home and then freezing it is the best canned route. However, if you’re in a pinch and don’t have time to make your own, I would suggest using the El Pato brand. They are the closest to homemade green chile sauce I’ve ever had. Great flavor for a decent price. The brand should be pretty easy to find in most grocery stores, even small ones.

Is Green Enchilada Sauce Spicier than Red?

This all depends on how the sauce is made and will vary across recipes and brands. I have found that the level of heat, no matter if it’s green or red, will never be the same across batches. Chiles seem to have a mind of their own. This means that, unless you grow them yourself, it will be hard to gauge how spicy they are since this depends on their water intake during their growing period. However, more times than not, you will find that red enchilada sauce is spicier than green sauce.

The Best Green Chile Sauce

Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes

Ingredients

  • 1 tablespoon unsalted butter
  • 2/3 cups chopped onion
  • 2 tablespoons flour
  • 1 1/2 cups chicken broth
  • 1 - 1 1/2 cups chopped green chilis (mild, medium or hot, this determines the spice)
  • 1 large clove garlic - minced
  • dash of salt (to taste)
  • dash of cumin (to taste)

Instructions

1. Melt butter in saucepan over medium heat.
