Phone Dump Friday – May 2013 Barley Crop

Welcome to Phone Dump Friday. I will be “dumping” my phone each Friday (or so I hope!) to give you a closer look into my crazy life with my two boys.

Planting season is officially over. The barley is in the ground and as you can see below is peeking out of the dirt. The fields look really good so far this year. We did have to re-drill one half circle thanks to the wind, yet I believe that has been done every year since I have known Cory. Hopefully that phase is over with.

Potatoes plants are also all in the ground and boy am I glad that three weeks is over. Planting season and harvesting are always the toughest on the boys. Dad’s a grouch which makes mommy grouchy and the boys miss their dad a lot during this time. They are used to going in the tractor or just working with dad often and because of regulations they can’t go at this time of year, not to mention it’s chaotic and dangerous until they are a bit older.

I hope you enjoy watching the growth of our crops this summer. I will be posting updates periodically throughout as they progress. When the potatoes are in bloom is my favorite time of year and we try our best to get a picture of all the boys in the field with all their hard work on display. It’s really a beautiful site!

26 Backyard BBQ Dishes

Schools are letting out and the weather is warming up. Flowers are blooming and my husband is starting to mow the grass much to his dismay. What does all this mean for me? It’s time for me to get planning some backyard BBQ’s. I love to host parties and it’s no secret that I want to go all out and have a little of everything there. Perhaps some could say I even go overboard, ok it’s pretty much a guarantee.

There is just something about the smell of hamburgers and steaks grilling on the grill while the children are playing that I can’t resist. I love the sound of the swing set being used while others are playing keep away on the slides. The laughter of adults and the variety of people that come a backyard BBQ and make new friends is what I love for, ok any party really. The more people involved the happier I am but for some having 50+ over is a little intimidating. Included below are some recipes that are meant for a smaller more intimate gathering as well, but know that if your looking to feed the whole neighborhood your shouldn’t have a problem finding something on the list.

This summer I know I will be hosting a couple backyard BBQ’s and attending even more, with this round-up of 26 backyard BBQ dishes I will be ready on a moments notice to bring what is needed to the BBQ.

Backyard BBQ Salad & Potato Dishes

My Thoughts On Vitacost

The Fabulous Food Dehydrator Part 4: How to Care for Your Food Dehydrator

Once you own a food dehydrator, you will want to be sure you care for it well so that it will keep performing for years! The longer you keep it in optimum working condition, the longer it will continue to save you money in the kitchen. Some dehydrator owners will tell you that they have been using the same machine for 15 years. My mom received her Excalibur as a wedding present and it’s still going strong 30+ years later. With proper care and maintenance this is very possible. Below, you will find some simple tips that will teach you how to care for your food dehydrator and keep it in its best working condition! After all, just like any appliance it is an investment you want to protect.

Keeping your food dehydrator clean is actually quite easy. With most dehydrators, many of the parts are dishwasher safe. When it needs to be cleaned, here is what you should do!

Disassemble the parts.
Rinse each one well in warm water.
Put them on either rack of your dishwasher and wash on a general cycle.
You can also hand wash with a mild detergent and soft cloth.

Sometimes, extra gooey and stubborn messes might make your dehydrator a nasty mess. In those instances, here is what to do:

One problem many food dehydrators complain of is that food will get stuck on the trays. This is expected since when you dehydrate food it can become very sticky. No worries! Just let the trays soak in a sink full of hot soapy water. Then, some gentle scrubbing should get dried on food to come off.
Don’t be afraid to let your pieces soak for several hours if needed.
Dehydrator trays are fragile so never use harsh abrasives on them.
Some people coat their trays with a flavorless no stick spray before drying. You can try this and see if it helps keep your trays cleaner.

Prevention is key to keeping your dehydrator in peek condition. There are several actions you can take to keep your dehydrator from getting extremely dirty in the first place. For example:

Don’t allow food stains and dried food to set in.
As soon as you are done drying, wash the parts of the dehydrator or begin soaking them.
Don’t run your dehydrator for any amount of time that is longer than necessary.
Avoid getting the food stuck in the first place. Line the trays with wax paper for the first hour of drying. After the hour has passed, the wax paper can be removed and the drying fruit carefully returned to the trays using a spatula.
Parchment paper can also be used in the same method, or no stick spray as mentioned above.

A few more helpful tips and tricks to remember:

It is important to always unplug your food dehydrator and allow it to cool before attempting to remove any of the individual trays. You don’t want to risk electrocution or burns! Because most models use stacked trays, you may need to start by removing the top tray and then work your way down until all of the dirty trays have been removed. Don’t rush it, take your time and prevent any injuries.

By following these tips, you will be able to keep your food dehydrator in tip top shape and perfect working condition! As mentioned in a previous post, save your warranty info in case any mechanical issues creep up. But otherwise, as long as you use your dehydrator according to instructions and clean as indicated in this article you should be able to enjoy it for many years to come!

Cinnamon Sugar Biscuits – Bite Size

Health wise can it get any worse than Cinnamon Sugar Biscuits? But can taste wise does it get any better than Cinnamon Sugar Biscuits? I started off with the thought of making homemade donuts but I was being a little lazy and remembered my mom frying biscuits over a campfire. I figured I could improve on that flavor and still end up with something doughy and donut like. I must say these Cinnamon Sugar Biscuits were a good thought and so fun because they were bite size!

The family had a hard time describing the flavors, one bite tasted like Sopapilla and the next bite tasted like Churros and the last bite tasted like a Funnel Cake. Either way it was delicious! I will admit that I won’t be making them often because of how bad they really are for us but I will also admit that they will be making it on the menu a couple times a year.

Growing up we when we would go camping my mom would always take biscuits and “fry” them in shortening in her dutch oven. It left them with the outsides being cooked and insides still a little raw. Our family loves raw dough of any kind really (especially cookie dough, so bad I know) so of course something like this was a guarantee on the menu plan. The one thing I never really seemed to care for was that usually my mom burnt them, oh the joys of cooking over a campfire.

These fried biscuits are most certainly an improvement on the campfire cooking and are fixed up with cinnamon and sugar. Serve these delicious bite size morsels with either a side of honey, strawberry or fudge sauce and an empty plate will be left in the wake. Of course serve them warm for the best flavor, I have found that you can keep the Cinnamon & Sugar Biscuits warm in your crock pot for a couple of hours before they get tough. What a unique treat to serve at your next backyard BBQ or brunch. Be aware though that one package of “pop” biscuits makes 64 bites.

The Cast Of Cinnamon Sugar Biscuits

1 package of “pop” biscuits (Grands Flaky Layers work perfect)
Cinnamon & Sugar Mixture (1/4 cup sugar and 1/2 – 1 teaspoon cinnamon mixed)
Oil for frying

Directions For Cinnamon Sugar Biscuits

1. Fill a frying pan with 2 inches of oil. These don’t take long to fry so you don’t need a large pan but one that you can maneuver the pieces around in to turn them. I generally use an inexpensive deep fryer, that doesn’t even have a temperature setting but it keeps me from wasting my oil each time.

2. Heat your frying oil over medium-high heat (I would guess to 350 degrees but I did the sizzle test, does it sizzle when your dough is placed in). Real scientific I know…

3. While your oil is heating you will want to prepare a plate with several layers of paper towels so that you will have a place to put your cooked pieces to absorb some of the oil and cool off.

4. Prepare your biscuits by pulling them in half (the flaky layer biscuits work the best) so that you have two round circles. Then I cut my circles into fourths. This gave me 8 pieces from each biscuit.

5. Drop pieces individually into hot oil and cook until golden brown turning half way through your cooking time. Mine took about a minute on each side.

6. Remove from hot oil and move to your paper toweled plate. Sprinkle with cinnamon and sugar mixture.

7. Repeat until all 64 pieces are cooked and serve warm with honey or and ice cream topping like fudge or strawberry.

Cleaning is not exactly the most fun thing I can think of, but it has to be done. One of the worst things for me is probably mopping, which means lots of water changes, and dirt streaks from your dirty mop. I really can’t stand it, it’s almost like I wasted my time cleaning, because mopping only makes the dirt worse! Let me to you living on the farm I have a lot of dirt!
