Delicious Campfire Smores Cookie Recipe

Summer is coming to an end and I know I have taken my last camping trip for the year.  What do I love about camping?  The hiking, four wheeling, hanging out around the fire with my family.  What do the kids love about camping?  The smores!  I stumbled across this recipe for Campfire Smores cookies and I have to say they will be made this week in my house.  With something so delicious and gooey how could you go wrong?


1 cup butter
1 cup brown sugar
Cream together butter and sugar until incorporated

2 eggs
2 teaspoons vanilla
Beat thoroughly

2 cups flour
½ teaspoon salt
1 teaspoon baking soda
1 cup chocolate chips, or one giant Hershey’s bar, chopped
1 cup mini marshmallows
Stir to incorporate


Bake at F350°, for no more than 11 minutes (after 11 minutes, the graham cracker will burn).
Some of the marshmallow may toast off the cracker, but simply remove the cracker from your cookie sheet and quickly transfer to a wire rack.

How fun is it that these cookies are actually baked onto the graham cracker?  The kids are going to LOVE LOVE LOVE these!

    On a 2nd look I see the graham cracker in the photo, but it’s not mentioned in the instructions. Please let us know. How many graham squares per cookie? How much dough per cookie? Marshmallow in the middle – sounds delish.

      Thank you for pointing out the information was not in there. I use half a graham cracker for each cookie and usually use a small ice cream scoop for the cookie dough. So 12 graham crackers should be enough with those measurements. The amount of cookies I get always seems to vary a little bit but usually 20 -24 cookies is what I get from one batch. My cookies appear to be bigger than the original poster as she yields 4 dozen usually.
