As a potato farmer’s wife you can imagine the amount of potatoes that are at my disposable. With potatoes at the ready at all times you can imagine that they are a staple in our diets.

One thing that I always make a double if not triple serving of is the mashed potatoes. Leftover mashed potatoes are so versatile and easy to incorporate in a multitude of recipes, including these Potato Cupcakes and Brownies. Yes I said mashed potato brownies, I encourage you to them check out.

Not only can you brown leftover mashed potatoes in a skillet in place of hashbrowns, they make amazing cupcakes.  These are asked for time and again in our house. They give the usual mashed potatoes a different taste as they are filled with cheese and chives, and what kid doesn’t love a cupcake?  I might be on to something on that front, wonder if I could make some broccoli cupcakes and pull it off?

Turn leftover mashed potatoes into a fun leftover with these potato cupcakes.

Ingredients
  1. 3 cups of mashed potatoes
  2. 2 eggs
  3. 1/3 cup sour cream
  4. 1 cup shredded sharp cheddar cheese (heaping cup)
  5. 2 tablespoons Parmesan cheese, grated
  6. 2 tablespoons chives, chopped
  7. Salt and pepper, to taste
  8. Extra sour cream for serving
Instructions
  1. Preheat oven to 400 degrees F.
  2. Lightly grease 9 of the wells of a nonstick muffin pan. I prefer butter keeping with the theme of mashed potatoes.
  3. In a medium mixing bowl whisk the eggs.
  4. Mix in the sour cream.
  5. Stir in both cheeses and the chives.
  6. Add potatoes and mix well.
  7. Spoon them into the pan filling the cups full but not overflowing.
  8. Bake 25- 35 minutes until the cupcakes are golden brown.
  9. Remove from oven and let them cool 5 minutes. Remove from pan.
  10. Serve with sour cream and extra cheese if desired.

      I have frozen them already cooked Jade. I freeze them single file on a cookie sheet until solid and then I will put them into a ziploc bag. They taste great when reheated but they do not all keep their shape the best.

    When we make a huge batch of mashed potatoes I always have extras. So this is the perfect way to use them up.

      I always make extra potatoes. Not only because I don’t really know how many to make but because there are so many things that can be done with them.

      They are so yummy Dawn and easy to adapt to a families needs. Add your families favorite veggies or some already cooked bacon for some variations.

      They are great to add a variety of vegetables or bacon to. I love mine with canned asparagus or broccoli. Of course bacon makes everything better as well!

      They would be yummy as a snack. I find they don’t hold their shape well in the microwave but they still taste yummy!

      They are always a hit in our house Pam. Easy to adjust the flavors as well. I often will mix in some canned asparagus or broccoli in just mine.

    Those are such a fun twist to the usual concept of a sweet cupcake! I would love to give this one a try for a brunch party.

      They are always a hit at brunches or BBQ’s. You can also mix in any veggies or meats you might like. Bacon is always a great addition.
