Old Fashioned Pumpkin Cookies

Old fashioned pumpkin cookies?  Who could go wrong these delicious and moist morsels?  Whenever I make these they don’t even make it to the icing stage honestly, but I included a recipe for it down below just in case you want that extra kick of delicious flavor.  I love anything baked with pumpkin.  Cookies are the top favorite in my house and I can convince myself that the kids are eating their vegetables.  Right?

As these Old Fashioned Pumpkin Cookies are a hit in our house I was finally able to get a good picture of them for you.  It’s only taken two years of beating my family off of them while I can get them iced (which rarely happens) and get a picture of them.  If Coulter asks me one more time if we can just eat them and “Mommy do we reeeeaaallly have to take a picture of them, I want to eat them now” one more time it could mean the last Old Fashioned Pumpkin Cookie he ever eats.

The Cast Of Old Fashioned Pumpkin Cookies

2 1/2 cups flour (I used my own pumpkin puree which has more liquid, so I needed 2 3/4 cups)
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
3/4 teaspoon ground cloves
1/2 teaspoon ground ginger
1/2 teaspoon Salt
1 1/2 cups granulated sugar
1/2 cup butter (1 stick)
1 15 oz can of pumpkin puree or 1 2/3 cups of homemade pumpkin puree
1 egg
1 teaspoon vanilla extract.
Icing or Glaze (recipe at bottom)

Old Fashioned Pumpkin Cookie Directions

1.  Preheat oven to 350 degrees.  Grease baking sheets.

2.  Combine flour, baking soda, baking powder, cinnamon, nutmeg, cloves, ginger and salt in medium bowl.  Beat sugar and butter in large mixing bowl until well blended.  Beat in pumpkin, egg and vanilla until smooth.  Gradually beat in flour mixture.  Drop by rounded tablespoons into prepared baking sheets ( I like the 35 mm cookie scoop which is equal to a tablespoon).

3.  Bake for 12-15 minutes (baking times differ according to oven).

4.  Cool on wire rack (or plates in my house) and drizzle with glaze.

Icing Or Glaze Recipe For Old Fashioned Pumpkin Cookies

The easiest way to ice these Old Fashioned Pumkin Cookies is to purchase a tub of icing and heat it for 30 -50 seconds in the microwave.  Stir your icing well and you will be able to pour your icing on as a glaze at this point.  If you stay closer to the 30 second mark you will be able to spread it on like icing and 50 seconds will allow you to drizzle the icing on.

If your looking for all homemade on the moist cookies combine 2 cups powdered sugar, 3 tablespoons milk, 1 tablespoon melted butter and 1 teaspoon vanilla extract in small bowl until smooth.

What is your favorite flavor of cookie?  Enjoy baking old fashioned recipes or do you prefer the easier cake mix cookies?

Yum! I can’t wait to try these. I made the most awesome banana bread (or cake) the other day. I had some overripe bananas so I decided to make banana bread. I smashed the bananas and then realized that I was out of flour (go figure with 7 people in the house nobody tells anybody when they use up the last of something). I didn’t really want to run to the store and the gas station on the corner would have been expensive so I improvised. I thought that cake mix has flour in it (along with all the other ingredients like baking soda etc) so I found a spice cake mix and used that for my dry ingredients and went back to the recipe for banana bread and it turned out wonderful. So moist and delicious. It lasted two days and that is something in my house. Thanks for the wonderful recipe..

      Patricia-
What quick thinking! I would have been making a run to the grocery store or tossing the ingredients in the fridge and hope that they stayed good till I could make it to town. I will be keeping this tip in the back of my mind for future use as I always have a couple different flavors on hand.

You can certainly add chocolate chips to these. We have added dried cranberries as well. It’s hard to go wrong with pumpkin 🙂
