Hasselback potatoes are, simply put, amazing. The thin , outer layers become super crispy, almost like a chip, while the interior layers remain super soft and creamy. It’s like a fusion between the 2 best things: a baked potato and potato chips. 

The thin cuts also help creating a super beautiful looking potato! I mean, we can all agree that hasselback potatoes looks way more impressive than simple roasted potatoes am I right?

How to cut hasselback potatoes

The only downside about those thin cuts? People usually believe they are super complicated to do. But honestly, once you have the right technique is a breeze.

And here’s the secret: 

You need 2 chopsticks or wooden spoons. 

Just place the potato between them and start slicing. The chopsticks/wooden spoons will instantly stop the knife from cutting the whole potato.

What potatoes work best for hasselback potatoes

You can use any potatoes you like and in any size you prefer. Use super large potatoes if you want to stuff something in between the cuts (cheese anyone?) and use smaller sized potatoes if you want to serve it as a side dish. Small red potatoes are amazing and Russets too. Yukon yellow potatoes are a delicious option as well.

How to season hasselback potatoes

You can pretty much play with the seasonings as much as you want but there’s a flavor combo that I just love to much and it’s the reason I decided to share this recipe in the first place

Honestly, there’s nothing quite as delicious as rosemary butter hasselback potatoes

There’s a little extra step involved in the process but it’s so worth it. 

First we brown the butter with some rosemary sprigs. The browned butter adds an extra layer of flavor (all those nutty notes) and also allows the rosemary to release all it’s herby, earthy flavor.

Then it’s just a matter of pouring the rosemary butter over the hasselback potatoes and baking it with a good sprinkle of sea salt on top.

Ingredients

  • ½ Cup butter
  • 2 Garlic cloves, minced
  • 2 Rosemary sprigs
  • Salt and pepper to taste
  • 1 Pound potatoes

Instructions

    1. Preheat oven to 425 degrees.

    2. Slice the potatoes. Place a chopstick on each side of the potato and slice thinly. Place the potatoes with the cut side up in a baking dish. 

    3. Brown the butter. In a saucepan over medium heat, melt the butter. Add the rosemary sprigs and cook until light golden. Add garlic and cook, stirring constantly until the butter has browned.

    4. Pour melted butter over potatoes. Sprinkle with salt and pepper and toss so everything is coated. 

    5. Take to the oven and bake for 1 hour or until done and crispy.
