Ingredients
  1. 1 - 1 1/2 cups pumpkin seeds cleaned and patted dry
  2. 2 tablespoons sugar
  3. 1 teaspoon cinnamon
  4. 1/8 teaspoon cloves
  5. 1/4 teaspoon nutmeg
  6. 1 - 1 1/2 teaspoon melted butter or olive oil
Instructions
  1. Heat oven to 300°.
  2. Rinse seeds well and get as much of the pumpkin pulp off of them as possible (your not going to get it all but as much as possible).
  3. Pat dry with paper towels. Don't let them dry completely on the paper towels, because they might stick!
  4. Toss seeds with the butter or oil, sugar, and spices.
  5. Spread coated seeds in a shallow baking sheet and bake for about 45 to 60 minutes, or until nicely browned and crunchy. You will need to turn the seeds from time to time while your roasting the pumpkin seeds.

    I’ve never considered sweet pumpkin seeds! I’m going to have to try this!
    Also, great tip about not letting the seeds dry too much on the paper towels, they are sticky little buggers aren’t they?!
