When it comes to baking, bread baking is probably the one that has the worst rap. Most of us think it’s difficult, time-consuming and a fail waiting to happen. However, trust me when I say, baking a loaf of this cranberry cinnamon swirl bread is as easy as it can get.

To make a loaf of this bread you just need to: 

  1. Mix flour, yeast, cinnamon, sugar, butter, dry milk, potato flakes, and flour.  
  2. Knead for a couple of minutes and let it rest for one hour.  
  3. Then just roll, brush with egg whites, sprinkle with cinnamon, sugar, cranberries, and roll. Let it rest for a bit more time.  
  4. Bake and make a little happy dance as your home fills with the smell of freshly baked bread and cinnamon.

The end result is a sandwich-style bread but slightly sweeter and with a couple of cranberries sprinkled here and there, so this is the perfect bread for pretty much anything you may crave

You can freeze the whole loaf of your homemade bread if you want to, however, I prefer to slice it before freezing. 

Just store your cinnamon bread slices in a Tupperware or freezer-friendly bag and you are all set. Once you are ready to it take straight to the toaster and it will be as soft and gooey as the first time you made it.

Ingredients

  • 3 Cups flour
  • 3 Tbsp sugar
  • 1/4 Cup potato flakes
  • 1/2 Tsp cinnamon
  • 1/4 Cup dry milk
  • 2 Tsp dry yeast
  • 5 Tbsp butter
  • 1 Cup water, warm
  • For the filling:
  • 1/4 Cup sugar
  • 2 Tsp cinnamon
  • 1/4 Cup dried cranberries
  • 1 Egg white

Instructions

  1. In a bowl combine all the dough ingredients. Mix until everything is well incorporated. Transfer to a floured surface and knead for 5 minutes or until you have a soft and elastic dough. Return to the bowl, cover and let it rise for 1 hour or until it dobles in size.
  2. Transfer the dough, again, to a floured surface and with the help of a rolling pin, shape a rectangle of 17"x 7"
  3. Brush with the egg white. Sprinkle with cinnamon, sugar and cranberries. Beginning with the short end, roll the dough to for a log and place in a loaf pan. Cover with a cloth and let it rise for about 1 hour.
  4. Preheat oven to 350 degrees. Take loaf pan to the oven and bake for 40 to 50 minutes or until done.
