Fall is in the air and that means everyone’s gardens around here are finally producing the crop that we have been waiting for all year. Cucumber Salad is a great way to use some of those delicious goodies from your garden.
While the days are still hot as Fall is approaching and barley harvest is upon us, I don’t like eating big hot meals during and am always on the lookout for something that will fill me up but remains light and easy to take in a tractor. During barley harvest I generally spend a couple of weeks driving tractor and so I look for something light that doesn’t sit on my stomach all day while I spend 10 hours a day sitting.
So if your looking for a family pleaser and a way to use up the goodies from your garden keep Cucumber Salad in mind. Cucumber Salad is easily customizable which means it can meet everyone’s personal tastes. Hate green pepper? Leave it out and add in a tomato instead. Not a big onion fan…not to worry it’s not a must. I have even seen this salad with carrots in it (while I am not a fan but to each their own).
Cucumber Salad is a dish that I grew up with at every summer and fall family function and I can even remember it being used as bribery a time or two because we loved it that much. Enjoy this cool summer salad and beat the heat during the day that comes with Fall approaching with ease (seriously it doesn’t get much easier than Cucumber Salad)!
The Cast of Cucumber Salad
1/4 – 1/2 purple onion
1 green bell pepper
2 cups white vinegar
4 TBSP water
salt and pepper to taste
Directions For Cucumber Salad
1. Combine vinegar and water in a bowl.
2. Slice cucumbers, onion and bell pepper and combine with the liquid ingredients.
3. Give a couple dashes of salt & pepper to taste.
4. Chill until served.
