Pasta is one of those delicious dishes that I just can’t get enough of. Actually not just pasta, I pretty much love anything Italian: Pasta, lasagna, risotto, just bring all the carbs and cheese and creamy sauces.
However, I’m also trying to use more vegetables, and love a good substitution for all those noodles and carbs.
Enter: Zucchini.
Zucchini is a superpowerful ingredient! It’s healthy, its low carb, and we can magically make it taste like pasta.
And trust me when I say these creamy white zucchini boats are so delicious you won’t even feel like eating something healthy. It’s a great recipe to make if your family has some picky eaters because, well, because this doesn’t taste like veggies at all. It tastes like pasta.
What meat goes well with zucchini?
This is a question I get a lot! The great thing about stuffed zucchini is that there are a million different ways to make it!
My favorite meat is chicken, so that’s what I use to make these creamy white zucchini boats.
However, ground beef is a common favorite! And ground turkey is also delicious. So feel free to use whatever you like or have on hand.
Can I freeze stuffed zucchini?
Yes! And a million times yes! I don’t usually freeze them because they are super quick to make. But if you prefer to have things ready to go in your freezer, just follow all the steps right before the final baking. Wrap tightly (this is key!) in plastic wrap, and freeze for up to 2 months.
But back to how these creamy white zucchini boats are made
You just need to pre-bake the zucchini shells. Baking the zucchini shells before stuffing them packs them with more flavor. It also helps to evaporate some of the zucchini water so your boats don’t end up mushy.
Then, just stuff them with chicken and Alfredo sauce and top them with as much cheese as you can. No one ever complained there was too much mozzarella.
A good sprinkle of Italian spices amps up the flavor so make sure you add it.

Creamy white zucchini boats that taste like a delicious pasta Alfredo but are low carb and healthy? Yes, please! This is a delicious stuffed zucchini recipe that’s perfect for hectic weeknights when you are craving comfort food but want to keep things light.
Ingredients
- 4 Zucchini
- 1 Tbsp olive oil
- 2 Cups cooked chicken, shredded
- 1 ½ Cups mozzarella cheese
- 1 ½ Cups Alfredo sauce
- 1 Tsp Italian seasoning
- 1 Tsp garlic powder
- ½ Tsp onion powder
- Salt and pepper to taste
- ½ Cup parmesan cheese
Instructions
1. Preheat oven to 350 degrees. Cut zucchini in half lengthwise and scoop out the filling. Brush with olive oil and place in a baking pan. Take to the oven for 8 minutes.
2. Meanwhile prepare the filling. In a medium bowl combine the shredded chicken with ½ cup mozzarella cheese, Alfredo sauce, Italian seasoning, garlic powder, onion powder, salt and pepper.
3. Remove the zucchini from oven and spoon the chicken mixture into the zucchini boats. Bake for 10 minutes.
4. Top the boats with remaining mozzarella cheese and parmesan cheese and return to the oven for 3 more minutes. Remove and sprinkle with more Italian seasoning.
