I love breakfast burritos, they are a quick way to have a complete breakfast on the go. Just wrap it tightly and eat in the car, at work, at the park or in anyplace you happen to be. 

However, when I discovered breakfast crunchy wraps, burritos took a second place. The reason? Crunchy wraps are AMAZING

And I’m not exaggerating even one bit, they are incredibly delicious and stuffed with all the good things a breakfast should have: 

  • Creamy scrambled eggs
  • Crispy potato wedges
  • Cheddar cheese
  • Avocado
  • Cilantro
  • Bacon
  • Everything tightly wrapped in a flour tortilla that’s cooked in butter until crispy and golden brown

If that’s not the most delicious breakfast you can think of, I honestly don’t know what can be.

How to make a batch of breakfast crunchy wraps

To prepare them I like to make a big batch, meal prepping style, and have them ready to grab and heat in a pan. It’s a total breakfast lifesaver. 

What I do is to set up a station. I basically cook everything, place it in bowls and then assemble all the wraps. Then, I individually wrap each one in aluminum foil. Once they I wrapped I store them in the refrigerator until I’m ready to eat them

They last for up to 4 days so if you make a big batch on Sunday you’ll have enough to last you (almost) a week. 

And how do you heat them? Once I’m ready to serve them, I just toast them in a skillet with a bit of butter. That’s what makes them crunchy and mind-blowing delicious. 

What’s a delicious breakfast wrap stuffing?

The core here is creamy scrambled eggs, bacon, and cheese. The rest is totally optional, so feel free to play with what you have on hand or what your family loves.

Breakfast Crunchy Wraps

Breakfast crunchy wraps are breakfast heaven! Slightly crunchy on the outside and completely stuffed with all the delicious breakfast fix-ins we crave they are a breakfast everyone in your family will love.

Ingredients

  • 4 Flour tortillas
  • 8 Eggs
  • ¼ Cup heavy cream
  • ½ Cup sharp cheddar cheese
  • Salt and pepper to taste
  • 4 Slices thick cut bacon, chopped
  • 1 Cup roasted potatoes
  • ¼ Cup cilantro, roughly chopped
  • 1 Avocado, sliced
  • 1 Lime
  • 1 Tbsp butter, melted

Instructions

    1. In a large skillet cook bacon until crispy all over, around 4 minutes. Spoon bacon out of the pan and place in a paper towel to get rid of the excess fat. 

    2. In a bowl beat eggs until yolks and whites are evenly incorporated. Mix in heavy cream and pour into the same skillet you used to cook the bacon. 

    3. Once it’s ¾ cooked add sharp cheddar cheese and salt and pepper. Cook for 30 seconds more scrambling to incorporate everything. Transfer to a bowl. 

    4. Drizzle the avocado slices with lime juice and a sprinkle of salt and pepper. 

    5. Assembly the wraps. Fill each tortilla with around ¼ Cup scrambled eggs, bacon, roasted potatoes, cilantro and zesty avocado. Fold to form a burrito.

    6. Brush with melted butter and place in a skillet. Cook for 30 seconds per side or until they are evenly golden brown.
